Ingredients
4 cups water
16 ounces cherry tomatoes, halved
4 cloves garlic, minced
3 tablespoons olive oil
2 teaspoons kosher salt
8 ounces spaghetti
2 teaspoons lemon zest
1/4 teaspoon crushed red pepper (optional)
4 cups mixed greens (arugula, baby spinach, or Swiss chard)
1/2 cup grated Parmesan cheese, plus more for garnish
Fresh basil leaves, for garnish
Instructions
Combine base ingredients: In a large sauté pan or Dutch oven, add the water, cherry tomatoes, garlic, olive oil, and salt. Stir to combine.
Add pasta: Place the spaghetti directly into the pan. Bring to a boil over medium heat.
Simmer and stir: Let cook uncovered for about 9–10 minutes, stirring occasionally, until the pasta is al dente and the tomatoes have broken down into a sauce.
Add flavor: Stir in lemon zest, crushed red pepper (if using), and greens. Cook until greens are wilted.
Finish with cheese and garnish: Remove from heat, stir in grated Parmesan, and top with fresh basil. Serve hot.
Notes
For a vegan version, skip the Parmesan or replace it with nutritional yeast.
You can use gluten-free pasta if needed.
Use ripe cherry tomatoes for the best flavor.
