Ingredients

  • 1 cup unsalted pistachios (soaked overnight)

  • 1½ cups unsweetened almond milk (or coconut milk)

  • 1 scoop vanilla or unflavored protein powder (whey, casein, or plant-based)

  • 2 tbsp honey or monk fruit sweetener

  • ¼ tsp almond extract (optional)

  • Pinch of sea salt

  • Ice cubes (optional, for blender version)


Instructions

  • Soak Pistachios: Soak pistachios in water overnight or for at least 6 hours. Drain before use.

  • Blend: Add soaked pistachios, almond milk, protein powder, sweetener, almond extract, and sea salt into a high-speed blender.

  • Chill: Blend until creamy and smooth. Pour into a freezer-safe container.

  • Freeze: Freeze for 2–3 hours. For a creamier texture, churn in an ice cream maker for 15–20 minutes before freezing.

  • Serve: Let thaw slightly, then scoop and top with crushed pistachios or dark chocolate chips.

Notes

Use Greek yogurt instead of almond milk for a thicker texture.

For keto, use erythritol or stevia instead of honey.
